USA 5000 X dough conditioner improves bread volume, controls the dough during make up, stabilizes the dough while proofing and has an excellent oven spring. Flour made from poorer quality wheat is greatly improved. Excellent quality bread can be obtained from wheat blends which otherwise could not produce satisfactory end products.

SUGGESTED APPLICATIONS
USA 5000 X may be added directly to the flour at the flour mill to make a special premix. This pre mix flour can be used in all yeast doughs, especially in sandwich bread, rolls, French breads and Italian breads by simply modifying the recipe.
USAGE LEVEL
0.5% based on flour weight (250 grams per 50 KGS of flour). Lower levels may be evaluated.
