MODIFIED WHEAT GLUTEN 5%
DESCRIPTION:
GLUTEN M 5 is a readily dispersible gluten designed for no-flour of low-flour brews, or conventional bread making systems. Through improved hydration, it can reduce requirements for vital wheat gluten by 30% to 40%.
SPECIFICATION:
INGREDIENTS: Vital wheat gluten, polysorbate 60, sodium stearoyl lactylate
COMPOSITION: PROTEIN: 55 - 60%
ASH: 2 - 5%
MOISTURE: 6 - 8%
FAT: 4.5 - 5.5%
All ingredients comply with U.S.P., N.F., or F.C.C. specifications as applicable.
This product is certified as Kosher by the Union of Orthodox Jewish Congregations of America.
PACKAGING:
50 lbs (22.7 kg) net weight in multiwall paper bags with P.E. lining.
RECOMMENDED USAGE:
In most dough systems, 7 lbs. of GLUTEN M 5 CAN REPLACE 10 lbs. of Vital Wheat Gluten.
STORAGE & HANDLING:
Preferred storage conditions: 70° and 50% R.H.
